I am trying to find a kid’s book published in the mid 80s. The story is about a brother and sister that find a pocket watch and use it to time travel to the 1700s to find/rescue their father that is lost in time.

It could be TRAPPED IN TIME by Ruth Chew, 1986. Nathan and Audrey use an old watch to travel in time. Except I don’t remember the part about the father being trapped in time. But check out this page just in case:
